Doughnut Glaze

  • Ready to use (no need to add water)
  • Neutral version, which can be added of colour/flavour
  • Very shiny
  • Protecting the product for drying out
  • Set very quickly, less than 1 minute
  • Not sticky once set, no risk to stick to the packaging or finger print
  • The product is freeze/thaw stable

Coffee Eclair


1. Choux Paste

    4g    Sugar
  89g    Milk
  89g    Water
    4g    Salt
  73g    Butter
108g    Flour
179g    Eggs


Boil together: water, milk, salt, sugar and butter. Add the flour. Roast until dry.

Place the mixture in the mixing machine, by using the paddle cool the dough in medium speed. Add the eggs step by step. Bake at 160°C, during 45 minutes to 1 hour. 



2. Filling

361g    Cremfilling Mocha   

3. Glaze

206g    Doughnut Glaze Neutral
           Coffee colour


Place de Doughnut Glaze in a sauce pan and bring to a boil. Remove the pan from the stove and add the colour.

4. Montage

Allow the Eclair to cool. Glaze Eclairs with the Doughnut Glaze. Make a hole into the bottom of the Eclair and fill it with the Mocha Cremfilling using a piping bag.
